  • Cut Location: Dino ribs come from the short plate primal, located behind the brisket and below the rib primal. Specifically, they include ribs 6, 7, and 8, which are long (8–12 inches) and oval-shaped 
  • Muscle Targeted: These ribs isolate the serratus ventralis muscle, which is known for its tenderness and high marbling
  • Nickname Origin: The term “Dino” comes from their massive size, resembling something a dinosaur might eat. They’re also called:
    • Brontosaurus ribs
    • Plate ribs
    • Brisket on a stick
