Beef Short Plate, also known as Navel, is a large boneless cut from the plate primal.  The Navel has a lot in common with both beef brisket and pork belly.  Beef plate is a forequarter cut from the belly of the cow, just below the rib cut. It is typically a cheap, tough, and fatty meat.
