The T-Bone Steak is named after the prominent T-shaped bone running through the center of the cut.  this bone divides the steak into two sections.

This steak comes from the short loin section of the cattle, making it a composite of two different textures and flavor profiles in one cut.  The T-Bone is well-marbled, meaning thin streaks of fat run through the meat, enhancing juiciness, flavor and tenderness during cooking.
