The Short Plate comes from the lower portion of the cow’s rib primal, just below the rib section, and contains a concentration of flavorful, well-marbled meat.
At Creekstone Farms, the short plate is sourced from Premium Black Angus Beef, often USDA Prime or Choice Grade, and is corn-fed to enhance flavor. It is also referred to as navel or beef belly, highlighting its fatty and tender characteristics.

The section right under the rib primal with a higher fat content. The Short Plate is a source of Short Ribs and Ground Beef. It’s also the home of the Skirt Steak—a thin, flavorful cut that’s best when marinated and seared over high heat.
